Homemade Fortune Cookies

I’ve always made these around Valentine’s Day for some reason. It’s fun to write your own little fortunes! My kids help out and write or draw on tiny slips of paper as well.

This year, the kid’s fortunes said, “You will soon see LEGO Movie 2”, “Chicago is in your future”, “You win”, smiley faces, scribbles, and “I love you”.

Mom & Dad’s fortunes said, “Wise kids eat their dinner without complaining”, “you will sleep good tonight”, “I love you to the moon and back”, “Happy Valentine’s Day”, and more!

Now, in all honesty, these are kind of a pain in the butt to make! But you get the hang of it, and it’s worth it when you have your kids watching you and cheering you on as you are quickly trying to fold HOT cookie dough into the shape of a fortune cookie as the tips of your fingers are literally burning off.

I know, I’m totally selling you on making these right?! HA! You should try them, just for the sake of saying you did – and they are actually VERY delicious!

A few tips before we get started:

Only bake 2-4 cookies at a time, as you will have to move very quickly when they come out of the oven. If they sit too long they will break when you try to shape them.

I use a silicone baking mat (parchment paper is great too!), but I also spray a very light coating of nonstick cooking spray on the silicone mat. Since the cookies are still pliable when they first come out, you need those babies to slip right off the mat.

Have a bowl of ice water to dip your fingertips in before you try and shape the HOT cookies.

Know that your first batch might not turn out, it’s a learning experience!

The cookie dough will thicken up over time, that’s totally normal – just spoon your tablespoon dollops on the already warm cookie sheet, and let it sit for 1-2 minutes before you smooth it out into a 3″ circle.

Homemade Fortune Cookies

Yield: About 24 cookies

Homemade Fortune Cookies

Ingredients

  • 3 egg whites
  • 3/4 C sugar
  • 1/2 C butter, melted
  • 1/4 t vanilla extract
  • 1/4 t almond extract
  • 3 T water
  • 1 C all-purpose flour

Instructions

  1. Preheat oven to 375*
  2. Have your fortunes ready (slips of paper about 1/2"x2")
  3. Line a cookie sheet with parchment paper or a silicone nonstick mat
  4. In a stand mixer (or a bowl and hand mixer), beat the egg whites and sugar until frothy - about two minutes
  5. Add in extracts, butter, and water
  6. Add in the flour last, mixing until just combined
  7. Spoon about 1 T of batter onto the baking sheet and using the back of a spoon, spread out into a 3" circle
  8. *** ONLY do 2-4 cookies at a time!!
  9. Bake for 7-8 minutes until cookies are a light golden brown around the outside
  10. Once pan is removed:
  11. Immediately flip cookies over using a spatula
  12. Insert fortune as you gently fold cookie in half (focusing on getting edge to edge and leaving the center open
  13. Pick up cookie by the sides and press center on the edge of a cup, meeting the two sides together at the bottom
  14. Place shaped fortune cookie in a muffin tin to finish cooling
  15. *** The cookies are VERY hot, and it can be difficult to try and form them without your fingers burning. Have a bowl of ice water next to you to dip the tips of your fingers in before you touch each cookie.
  16. *** You'll notice the batter starts to thicken as you move on to the rest of your batches, simply dollop a tablespoon of batter on the already warm cookie sheet, and let it rest for a minute or two - then proceed with using the back of your spoon to spread the dough into a 3" circle and bake.
  17. Store in an airtight container for 1-2 weeks!
