Easy Chicken & Wild Rice Soup (Immune Booster!)

With my husband being out of town for work all week I’ve just been trying to keep my head above water! On night #3 I had no plans for dinner and was about to pick up Happy Meals (and count a bottle of wine and a sleeve of crackers as my dinner), but I had been craving chicken & wild rice soup all week. So I picked up a rotisserie chicken (Mom’s best friend!) and decided to come up with an easy, feel good soup that we would all enjoy. This EASY Chicken & Wild Rice Soup (Immune Booster!) did NOT disappoint!

Research shows that chicken noodle soup actually does help you feel better when you are sick, and I believe it. There is something so comforting about it, which is what I was trying to accomplish with this soup challenge.

Bonus? I added in some ingredients that not only makes this an immune booster soup, it also adds to the flavor! Freshly grated ginger, garlic cloves, and turmeric powder!

I used the breasts of a rotisserie chicken but you can obviously make this by using raw chicken and boiling that in the broth as well.

Easy Chicken & Wild Rice Soup (Immune Booster!)

Yield: 6-8 servings

Easy Chicken & Wild Rice Soup (Immune Booster!)

Ingredients

  • 8-10 C chicken stock (bone broth would be even better!)
  • 1 Rotisserie chicken, meat pulled off
  • 1 C diced carrots
  • 1 C diced celery
  • 1 large onion, diced
  • 3/4 C wild rice blend
  • 2 garlic cloves, minced or grated
  • 1 small chunk of fresh ginger, grated
  • 2 t turmeric powder
  • Salt & pepper

Instructions

  1. Saute carrots, celery, onions, and garlic in a pan with olive oil over medium heat until veggies are tender
  2. Add chicken stock and bring to a boil
  3. Rinse the dry rice, then add to chicken stock along with chicken
  4. Reduce heat to a simmer
  5. Add in ginger and turmeric
  6. Simmer for 20+ minutes or until rice is fully cooked
  7. Season with salt & pepper
