Healthy Breakfast Muffins

Kid's breakfast menu, breakfast ideas for kids!

This year, I will not have school mornings get the best of me! I am focused on setting the family up for success and eliminating stressful, rushed mornings. No more breakfast battles, I made a “menu” that’s on our refrigerator so the kids can see what we are having. This eliminates them #1 – asking me “what’s for breakfast” and #2 – complaining about it. We sat down and made this menu together and agreed we will be thankful each morning for the food that fuels our busy bodies. These healthy breakfast muffins make a quick and healthy breakfast (we pair it with a yogurt).

I make a double batch, and then individually wrap and freeze these so they are ready to grab and go! Just pop in the microwave for 30 seconds, or take out and they will thaw in time for lunch 😀

These muffins are packed with zucchini and carrots – adding in orange zest and raisins to make them kid approved and extra delicious!

Healthy Breakfast Muffins

Servings: 12 muffins

Ingredients

  • 1 C all purpose flour
  • 1 1/2 C whole wheat flour
  • 1/2 C old fashioned oats
  • 1 T baking powder
  • 1 1/2 t cinnamon
  • 1 t salt
  • zest of one orange
  • 1 stick of butter
  • 1/2 C sugar
  • 3 eggs
  • 1/4 oil (coconut, avocado, olive)
  • juice of one orange
  • 1 C grated zucchini
  • 1 C grated carrot
  • optional: 1/2 C raisins
  • optional: 1/4 C chia or flax seeds

Instructions

  1. Preheat oven to 350* and spray one (12 count) muffin pan with non-stick spray
  2. Mix flours, oats, baking powder, cinnamon, salt, and orange zest together
  3. Cream butter and sugar until light and fluffy, add in eggs one at a time
  4. Add in orange juice, oil, zucchini, carrots, and raisins if desired
  5. Combine wet and dry ingredients, careful not to overmix
  6. Pour into muffin cups and bake for approximately 16 minutes or when you can insert a toothpick and it comes out clean
  7. Remove muffins from pan and cool on a rack
  8. Cool completely and individually wrap in plastic wrap and freeze - when ready to eat, take out a muffin and microwave for 30 seconds
